Have you noticed that the little things in life seemingly choose to go haywire precisely at the time you need things to be under control? Consider with me: getting out the door in a mad rush is when the matching shoe can’t be found and the basket of gloves falls to the floor. Bumping into someone you really like and haven’t seen in a while is when you’ll be very smiley and realize later you had spinach in your teeth. Heading to work, the first day on the job in a new city, is when you get on the wrong bus. Trying to leave for a crucial appointment is when you’ll knock the massive jar of olive oil onto the concrete kitchen floor, leaving shards of glass and oil everywhere. It’s as slick as ice skating now; except with skating all the cutting happens to the ice, not to your bare feet. Also, there’s no cute hand holding to look forward to.
(These situations all happened to a friend by the way.)

I’ve been thinking through this conundrum (for my friend, of course) and realized something. I (okay, okay, that friend is me) easily get tripped up over the things that get a little wonky in my life but glaze over the normal things that are actually quite wonderful. FOR example: I don’t make my coffee every morning saying, “Whaaaatt?! I have coffee I can actually make this morning. And when I’m so tired! Imagine that.” Or I don’t turn the key to my mini van and say, “HaHAA! Gurrrllls, lookey here! The car has started! And just when we needed it to. It would do that today!” Of course I don’t do that. There’s no irony to laugh at when a car starts or when shoes match. I enjoy irony, I really do. It gets me in that spot that makes me laugh. But, I want to be careful to stay in the humor of it and not quickly jump to complaining allll the time (I would do that. Hmpf. 😉
Okay, finally…This soup. It’s everyday goodness AND it has a touch of irony. Dairy free and creamy. I mean laughable right? The secret to this hilarity? 
“Oh, hey cauliflower. ”
And the other players. Fennel, leek, shallots, garlic, herbs. These all come together to make a rich broth that could go up against a bisque. You’ll cook it down together and then blend, blend, blend away.
 

That is the base of your soup. Now, right here you could call it a day and just eat this straight up. It’s THAT good. But, lets keep going. Next, you’ll add the carrots and kale for a quick saute.

Then the chicken with all those yummy Italian seasonings.

To finish. Simmer that chicken, add in the extra veg, warm the bread, call a few friends and gratefully dig in while you laugh at the mishaps of the day together. Enjoy!
